23 years old, distilled 22nd September 1992, 58.6% abv, Second-Fill Ex-Sauternes Hogshead, 198 bottles

The nose has cream soda, pears, Demerara sugar and hints of cinnamon and sawdust. The mouthfeel is thin with no cling. The body has pear, apricot, sawdust, light pot-pourri and a little light oak towards the finish. The finish itself is sweet, with cinnamon and vanilla, and short.

Water brings out thin, rapidly expanding whorling that settles quickly into lingering mottling. The nose gains more sawdust, and loses the sugar. The body gains more of the floral notes, and loses the apricot. The finish is unchanged.

A superb dram, light but packed with interesting flavours. One for starting the evening.
